Step 1. Crack eggs into a bowl. Season. Beat until fully combined. Step 2. Heat butter in a non-stick pan over medium-high. Step 3. Add eggs. Stir constantly with a spatula, shaking pan. Step 4. When just set, fold in thirds. Slide onto plate.
